This sake is made with 100% Aiyama, a rare and prized sake rice. The first drops of the new brew are carefully bottled, pasteurized in the bottle, and then aged at sub-zero temperatures. Layered with the dimension of time, this refined Junmai Daiginjo offers muscat-like ginjo aromas, a pleasant acidity, and a matured, rounded flavor. It can also be enjoyed warm, revealing new possibilities for appreciating sake.
