“Dassai Elegantly Tipsy” has been reborn with a new polishing ratio of 23%.
Creating a low-alcohol sake has been a challenge we have pursued for over 20 years, facing setback after setback against a very high wall. Simply adjusting by dilution never yielded a satisfying aroma or flavor.
By implementing even more delicate temperature and water management during the early stages of fermentation—beyond what we do for Dassai beyond—we succeeded in crafting a sake that finishes at under 12% ABV. After pressing, no water is added; it is bottled exactly as it is.
The result is a sake with an alcohol content of only 11%, yet offering a vibrant fragrance and the elegance worthy of a Junmai Daiginjo.
