“Oysters from the Sea of Japan are the very epitome of summer. Among them, the wild rock oysters from Kisakata in Akita captivate oyster lovers with their limited availability. These oysters grow on prime rocky terrain formed from lava flows of Mount Chōkai, nourished by cold, mineral-rich ocean springs fed by melting snow from its foothills. This miraculous environment produces oysters with remarkably rich umami.

This Junmai sake is crafted for oyster lovers by brewers obsessed with those oysters, in collaboration with oyster professionals. It is made only from rice and rice koji, employing Kariho’s unique starter mash method. Part of the koji is white koji, which induces a vivid acidity.

It also pairs beautifully with seafood beyond Akita oysters!
