“This sake is brewed using 100% rare Soube Wase rice, revived by Tatenokawa Brewery over more than three years. The rice is polished down to 18% and brewed with Yamagata KA yeast.
Soube Wase is a variety suited to aging, and its naturally deep flavor becomes even smoother, more complex, and mature with time. The rice vintage for this product is 2023—representing the harvest year. Though the sake is unaged at release, its flavor will continue to evolve, so we invite you to imagine how it may taste a year from now, and enjoy it to the fullest.”
