A dry brewing method inspired by winemaking. The mash is prepared with a sugar content of 22–28 degrees, then rapidly cooled and fermented with the addition of wine yeast. It has been brewed to bring out a refreshing acidity and sweetness. The flavor is reminiscent of crushed strawberries mixed with amazake. You can enjoy the clean finish and lingering aftertaste characteristic of sake. It has a matured quality similar to that of a sweet white wine.
